Every few years, an ingredient becomes “the thing,” but honey is interesting for a different reason: it’s genuinely complex. Floral source, region, season, and handling all influence what honey contains — and what researchers are even studying. In my latest Substack, I share insights from a conversation with Holly Moore (The Ingredientist) and Keith Roberts of The Valley Hive, including why certain honeys get more attention, and why hive materials like propolis and royal jelly are so compelling in both historical use and modern research.
This isn’t advice to run out and buy anything. It’s a deeper look at nature’s design — and what we’re still learning from it.
